Homemade Pasta Dough
- 2 cups flour, plus extra for dusting
- 3 large eggs
- 1 Tablespoon olive oil
- 1 teaspoon salt
- Make a mound with the flour
- Make a well in the center and add the eggs, oil and salt
- Whisk the eggs in the well, gradually incorporating the flour, using a bench scraper
- knead for about ten minutes
- If the dough is too soft add a little flour, too firm add a little water
- shape the dough into a ball and let rest for at least 20 minutes
- Roll out on a lightly floured surface. or use pasta machine
